These questions have been on my my mind a lot lately as I work on a new wholesale coffee concept. I want to develop a wholesale coffee concept that has a new point of difference. I have always wanted to develop a blend that is represented in the market place in a totally uncompromising way and in a way that has never been done before and I am now fortunate to be in a position to do just that. But the question is how much do I have to compromise? Or can I develop a coffee offering that is 100% 'No Compromise’ and are cafe owners and espresso bar owners willing to pay for it?
I am tempted to believe they are out there so I have decided to bite the bullet and find out if I am right or wrong.
The first step was to jump on the plane last Friday to cup some coffees with Fleur and Jason at Melbourne Coffee Merchants the Australian importer of Mercanta coffee beans.

What I love most about rocking up to these cupping’s is the simple fact that you have no idea what is going to be on the table and when you turn up there is simply coffees labeled with numbers and you don’t find out what the coffees are until after you have finished cupping, this for me is very exciting. And one of the best parts of my job, cupping new coffees that is and discovering coffees from origins I have not tried.
As equally as exciting was placing our first order of green beans for the blend, can’t wait till they arrive.
